Serves 4-6
Ingredients:
1 kg shrimp (unpeeled)
2 onions (quartered)
5-6 garlic cloves (whole)
2 wooden cloves
1 large wooden cinnamon stick
1 large carrot (grated)
1 lemon, halved, squeezed + juice
Salt + ground pepper + pepper corns + 7 spices + ginger (grated or powder)
Cumin + 6-7 bay leaves + 1/2 tsp brown sugar
Method:
Rub all ingredients together in a deep wide pot. Add two cups of very hot water. Bring to a boil then cover and simmer to allow contents to infuse their aroma and water to slightly reduce; over medium heat; (approximately 5 to10 minutes). Meanwhile, wash shrimp; one by one, under running tap water. Strain in a strainer. Place into pot. Stir into contents. Add one litre of hot water. Bring to a boil. Stir. Cover and allow to cook only for 8 to 10 minutes. Remove away from heat. Remove shrimp; by means of a pair of tongs, into a serving bowl. Strain hot broth over shrimp; except for onion parts; if they could be salvaged by a spoon. Add onion to the serving bowl and serve hot.
