Sherif, 28, won the first set 6-3 and lost the second 6-4 before winning the third and final set 6-4.
She performed outstandingly in the open to reach the semifinal, overcoming Czech player Sara Bejlek 2-0 on Saturday.
The Buenos Aires is Sherif's seventh title in the WTA 125, the second-highest level of women's tennis competitions.
With the win, Sherif jumped 24 places in the world ranking, reaching 68th with 929 points.
