Eman, 38, worked as a presenter for the local Al-Aqsa Radio and hosted programmes besides her role as a social activist.
"Is it possible that we are still alive until now? ... May God have mercy on the martyrs," Al-Shanty wrote in a post approximately three hours before her death.
Israel has targeted tens of Palestinian journalists reporting on its genocidal war in the Gaza Strip, killing and wounding tens, in a clear attempt to prevent journalists from documenting its war crimes.
On Wednesday, the Palestinian Journalists Forum mourned Shanti, pointing out that "the number of journalists killed by Israeli bombardment since 7 October 2023 has risen to 193."
"As we mourn journalist Eman Shanti, we renew our commitment to the souls of the Palestinian media warriors who wrote with their blood for Palestine to continue their path," the forum said in a press statement.
Furthermore, it condemned "the international silence and failure to protect Palestinian journalists and enable them to carry out their professional duties according to international laws and humanitarian conventions."
The airstrikes that killed Eman Shanti come as Israel continues a brutal campaign of bombardment and ethnic cleansing of northern Gaza that started in the first week of October.
Israeli bombardment of the strip has killed 44,805 and wounded 106,257 since 7 October 2023, the Palestinian Ministry of Health said.
In the past 24 hours, the occupation army also committed two massacres against Gaza families, killing 19 citizens and injuring 69 others, the ministery added.
