Waldorf salad

Waldorf salad

 

Serves 4-6

Ingredients:

 

1 cup cooked boneless, skinless chicken (shredded)

2 large green or Egyptian apples (cored, cubed with skin)

1/2 cup celery sticks (chopped)

1/2 cup crimson red grapes (halved, seeded)

1/2 cup shelled walnuts (coarsely chopped)

1 cup sour cream

2 tbsp mayonnaise

1 tbsp mustard

Juice of one lemon

1 tsp white vinegar

2 tbsp pickled cucumber or carrot (finely chopped)

Salt + pepper + grated nutmeg

 

Method:

In a large bowl, add the shredded chicken; could be either boiled, roasted,  or grilled. Season chicken with salt, pepper and nutmeg. In another bowl; combine mustard, lemon juice, vinegar, mayonnaise and sour cream. Mix well to incorporate. Add celery, pickles, apples, grapes and walnuts. Remix well. Add to seasoned chicken and gently mix to combine and all ingredients incorporate together. Serve alone or as a side dish with barbecued, grilled or roasted meat, poultry or game.
