Yields 12-15 pieces:
Ingredients:
3 cups All-Purpose flour
2 tbsp milk powder
1/2 tsp salt
6 tbsp oil
1 tbsp ghee
1-1/4 cups warm water
1 bunch finely chopped parsley or any other greens preferred
200 gm of Feta cheese (or) any other grated cheese preferred
Method:
Sift flour in a large bowl. Add dried milk. Mix well to make sure no dry lumps left behind. Add oil. Mix gently to incorporate. Add water gradually while mixing; until a well incorporated, soft, slightly sticky dough is formed; while continuously kneading for (4-5 min.). Shape into a ball. Slightly sprinkle flour on the base of a bowl. Cover and allow to rest for 30 minutes.
The Stuffing:
Crumble the Feta. Add the ghee. Incorporate well. Pour in chopped parsley and mix well. Sprinkle some flour on your worktop. Flatten the dough with a lightly floured rolling pin; as thinly as possible; into a big rectangle. By means of a sharp knife, or a dough cutter; cut into pairs of long four to five cm wide strips. Place an amount of the cheese stuffing on one strip; at even intervals along the dough ; with the longer side facing you; with a one cm distance between each. Place the twin strip on top to cover that with the stuffing. Press upon the empty space between each and cut. Press with a tip of a fork upon all four ends. Now you have a number of stuffed small rectangles. Repeat until all the dough is done. Sprinkle with some black seeds or sesame seeds. Place in the fridge for 30 minutes. Deep fry in hot oil until golden brown. Remove on kitchen paper towels. Serve hot.
