Pancakes with beef ham and cheese
Serves 4-6; (pan size 14cm)
Ingredients:
Batter:
1 cup flour
1 cup whole milk
1/2 cup warm tap water
1.5 tbsp castor sugar
2 large eggs
2 tsp vanilla extract
2 pinches of salt
1 pinch of black pepper
3 tbsp butter (melted)
Filling:
Cold cuts (sliced)
Yellow cheese (thinly sliced)
Few drops of oil
Method:
Combine all ingredients in an electric blender; or use with an electric hand blender. Pour the batter through narrow sieve holes. Heat a non-stick pan. Lightly oil base by a silicone brush. Pour an amount of batter to fill the full circle of pan base; rendering a thin pancake. When the downside is done, gently flip up to cook on the other side. Remove aside. Repeat process; without oiling base of pan again; batter is full of butter. When all amount of batter is done. Start filling pancakes. Layer one slice of ham upon half the circle towards you. Top it with a slice of cheese. Fold pancake into a triangle as illustrated. Continue process until all batter is finished. Arrange two pancakes in each microwaveable serving plate. Top each with a slice of cheese. Microwave for 25-30 seconds; just to heat through and top slice melts. Repeat with all serving dishes, then serve immediately while still hot.
