
Stuffed dates with nuts and cream
Serves 6-8
Ingredients:
250-300 gm soft dried dates (halved, pitted)
100 gm blanched almonds (halved or slivered)
100 gm shelled pistachios
30 mls orange juice
200 mls sweetened whipped cream (crème chantilly)
Zest of half an orange
Half a handful of pomegranates
Method:
In a large bowl; add juice and cream. Blend gently by means of a hand whisk; just for a few seconds, to integrate and mix together. Refrigerate covered. Meanwhile, crush finely; in an electric grinder, both almonds and pistachios, to almost powdered. Mix with cream and juice. Spoon an adequate quantity of this mixture; into each half of prepared date halves. Top each half with a few pomegranate arils. Serve after iftar. RAMADAN KAREEM .. !!!
