Spaghetti carbonara
Spaghetti carbonara

Serves 4-6



500 gm beef bacon (diced)

400 gm spaghetti 

4 whole eggs + 2 yolks

1 cup grated Parmesan cheese

1/4 cup pasta water

Salt + Pepper



Fill a large pot with plenty of salted water.  Bring to the boil.  Add spaghetti.  Allow to cook as per package instructions.  Meanwhile; stir fry bacon in its own fat.  Remove away from heat, when done.  In a large bowl; beat all eggs vigorously.  Add salt and pepper.  Beat to distribute.  Stir in fried bacon and cheese.  Drain pasta; reserving aside quantity needed of water.  Add very hot pasta over eggs and bacon.  Stir in pasta water.  Combine and integrate.  Taste for salt.  Transfer on to a serving dish.  Sprinkle some ground pepper on top and serve.
