Baked salmon side

Serves 4-6


Whole side of salmon (approximately 1 to 1.25 kg)



1 tsp freshly grated garlic

Juice of 5 lemons

1 tsp Dijon mustard

1 tsp soy sauce

1 tsp teriyaki sauce

1 tsp Worcestershire sauce

1.5 tsp pomegranate molasses

1 tbsp fresh grated ginger

2 tbsp fresh dill leaves (chopped)

Olive oil (to drizzle)

Salt (to taste) + pepper



In a medium sized bowl;  add all marinade ingredients.  Mix them well to combine and integrate well.  Rub generously into flesh of salmon side.  Place side over an oil drizzled bottom of an ovenproof dish.  Cover and refrigerate for overnight.  Preheat oven at 180-200 degrees Celsius.  Remove cover off the salmon.  Drizzle some olive oil on top.  Bake for 35 minutes.  Serve with sautéed vegetables of your choice aside.
