Yields 1 loaf x 10-12 slices
Ingredients:
1.5 cups All-Purpose flour
1 cup whole-milk plain yoghurt
1.3 cups fine castor sugar
2 tsp baking powder
1 tsp salt
1/2 tsp sodium bicarbonate
3 large eggs
1 tsp vanilla extract
1/4 cup corn oil
75 gm butter
Method:
Grease a 23 x 13 centimetre non-stick loaf pan and lightly flour. In a large bowl, beat well; eggs, sugar and butter until pale and fluffy. Add vanilla and beat to incorporate. Mix flour, baking powder, salt and sodium bicarbonate together. Sift them over egg mixture. Fold gently to mix dry and wet ingredients; adding oil gradually while folding. When all ingredients are incorporated; pour the batter into prepared baking tin and bake in a preheated oven of 180 degrees C. Baking time is approximately 50 minutes. When done, remove from the oven and leave to cool off completely within loaf pan, then remove over a flat wire rack until reaching room temperature. Slice and serve.
