Broccoli zucchini minced meat saut
Serves 4
Ingredients:
1 kg zucchini (peeled, sliced into wheels)
2 cups broccoli florets (trimmed, stems peeled)
1 cup cooked minced meat
1 tbsp minced garlic
1 chicken or vegetable bouillon cube + 1/2 a cup hot water
30 gm butter
1 tbsp olive oil
Salt (to taste) + pepper + grated nutmeg
Method:
In a wide cooking pot; add butter and oil. Heat pot over medium-high heat; to melt butter and slightly heat oil. Stir in garlic; just to slightly change colour and turn yellowish. Stir in seasoning. Add prepared, washed, drained zucchini and broccoli. Stir to hear a swishing sound. Stir bouillon to blend in hot water and add to pot. Add in minced meat. Stir to mix with all ingredients and lower heat to low; covered, only for six minutes; after being brought to the boil. Taste for salt. Remove away from heat. Keep covered, until it sets and slightly cools off. Serve with fluffed rice, or with fried, fluffed vermicelli, a green salad, or a raiita salad aside.
