
Artichoke hearts and green fava beans in dill sauce
Serves 4-6
Ingredients:
8 fresh artichoke hearts
2 cups fresh fava beans (fuul akhdar)
1 onion (finely chopped)
1/4 cup dill leaves (chopped)
2 vegetable bouillons cubes
Fresh juice of 2 lemons + extra at table
2 tbsp extra virgin olive oil
Salt + pepper
Method:
Heat a large cooking pot on high. When hot, add oil and lower heat immediately to low. Stir in onion. When translucent; add salt and pepper. Add artichoke hearts and lemon juice. Then add fava beans. Add hot water to cover vegetables by four centimetre height. Bring to the boil. Add cubes. Cover pot and lower heat to lowest low. Twenty minutes later; add dill. Remove away from heat and allow to set in heat of pan for five to ten minutes then serve with extra lemon wedges or halves aside; for an extra zest and with some fluffed rice vermicelli; if desired.
