Cheese nachos
Cheese nachos


Serves 4


110 gm tortilla chips

100 gm canned sweet corn kernels (drained)

1 cup canned black beans (drained)

1 cup cheese salsa (Tostitos)

1 cup grated cheddar cheese

100 gm sour cream

1 cup guacamole



2 avocados (stoned, peeled, mashed)

1 medium tomato (diced)

1 tsp minced garlic

Juice of 2 lemons

5-6 drops of Tabasco sauce

1 medium bunch of fresh coriander leaves (finely chopped)

Salt + Pepper + cumin

Mix all ingredients gently together; to blend and incorporate well.


In an ovenproof dish, layer tortilla chips to fill base.  Scatter sweet corn and black beans evenly.  Add cheese salsa, then grated cheese.  Bake in a preheated oven at 180 degrees Celsius; for approximately 20 minutes.  Remove from oven. Top with sour cream and guacamole as illustrated.  Serve hot.
